With a career spanning almost three decades, Mick learned his craft working in various Michelin starred restaurants including Midsummer House, Chapter One, Club Gascon and Foliage (now Dinner) at The Mandarin Oriental, Knightsbridge, before winning a Michelin Bib Gourmand in his first head chef role at the age of 26.
He then went on to work as head chef for Gordon Ramsay Restaurants before opening his own restaurant, The Windmill Chatham Green, where he won a Michelin Bib Gourmand along with other national awards, which he maintained for the five years he owned it.
You can now find Mick cooking for his clients, often high profile celebrities, in their homes, running pop-ups at various venues, or cooking in front of his guests at the Chef’s Table at his CHEF School Of Cookery in the beautiful Essex countryside, in Maldon.
Mick’s debut cookbook is due to be released this autumn.
