ABOUT
I am based in Pembrokeshire, South Wales. My professional journey flourished when leaving Wales for London, from running Michelin-star restaurants and being awarded countless AA rosettes. I have travelled the world showcasing my talents. I have worked alongside influential chefs such as Michelin-starred Pierre Gagnaire and Helene Darroze, Gareth Ward, James Sommerin and Gordon Ramsay. I have worked in restaurants, including Helene Darroze at The Connaught Hotel, The Lecture Room and Library Sketch, Ynysir and Rabot 1745 for Hotel Chocolat.
I have recently featured on both Disney+ and BBC. Gordon Ramsay invited me to participate in a documentary “Uncharted” for Disney+ showcasing the best produce in Wales, which ended in a superb cook-off. Similarly, The Hairy Bikers documentary on the BBC was broadcast to show the best Pembrokeshire offers. I introduced Si and Dave to his food ethos - simple but focused on flavour.
I have cultivated strong relationships with farmers and work closely with small local suppliers, allowing me to handpick the produce to ensure it has the best quality ingredients.
