Philip joins us from ‘Cheshire Cooks’ Cookery School in Tarporley which, along with two plush en-suite bedrooms and spa facilities, completes the conversion of Lakeside Barn which dates back to the mid-eighteenth century.
Philip began his culinary career at Hollings College, Manchester. Following this he was trained as a Chef at the Savoy Hotel, London, working alongside his mentor Silvino Trompetto, the Maitre Chef des Cuisines. Philip returned to Hollings College to further his academic catering career and graduated with a degree in Hotel and Catering Management.
Philip spent 18 years as Chef Patron of the award-winning Green Bough Hotel in Chester, a fifteen bedroom luxury hotel with fine-dining Olive Tree Restaurant before making the decision to sell the Green Bough and down-size to offer accommodation at the Lakeside Barn.
Now Philip works alongside lifelong cook and professional caterer Jane Smith to teach a handful of hands-on full-day courses that include Italian, Spanish, Fish and Shellfish, Cakes and Desserts.
